I’ve been rushing about like mad a lot at the moment, so all of my meals have been quick affairs, like this one on Thursday.
I’m a big fan of the open sandwich for three reasons. One – I love all things Scandinavian. Two – having an open sandwich means that you can really stack up your fillings/toppings without the danger of them squelching out the side when you bite into your sandwich, which is, in my opinion the ultimate disappointment. Three – the bigger ratio of filling to bread is more satisfying, therefore making it a good option for a quick bite on the go as you don’t get hungry again for aaaages. Plus if you have wholemeal bread it’s also pretty darn good for you.
My favourite toppings currently are Norwegian jarlsberg cheese on wholemeal bread or hummus, cherry tomatoes and black pepper on rye bread.
