Last week I was unfortunately, sick as a dog and therefore my mind was far, far away from baking. While I was on the road to recovery I did manage to do some reading, which thankfully helped me to get better and re-inspired about food. I’m really enjoying How to be Danish by Patrick Kingsly, which isn’t as the title would lead you to believe, a guidebook to becoming Danish – it is rather a discussion about several areas of their culture, including food and design, which both spiked my interest.
In particular, from the food chapter, I thought it was worth sharing the first three points of the New Nordic Cuisine Movement Manifesto, which are:
- To express the purity, freshness, simplicity and ethics we wish to associate with the (Nordic) region
- To reflect the changing of the seasons in the meals we make
- To base our cooking on ingredients and produce whose characteristics are particularly excellent in our climates, landscapes and waters
