How to be Danish

Last week I was unfortunately, sick as a dog and therefore my mind was far, far away from baking. While I was on the road to recovery I did manage to do some reading, which thankfully helped me to get better and re-inspired about food. I’m really enjoying How to be Danish by Patrick Kingsly, which isn’t as the title would lead you to believe, a guidebook to becoming Danish – it is rather a discussion about several areas of their culture, including food and design, which both spiked my interest.

In particular, from the food chapter, I thought it was worth sharing the first three points of the New Nordic Cuisine Movement Manifesto, which are:

  1. To express the purity, freshness, simplicity and ethics we wish to associate with the (Nordic) region
  2. To reflect the changing of the seasons in the meals we make
  3. To base our cooking on ingredients and produce whose characteristics are particularly excellent in our climates, landscapes and waters

Now to start work on the mountain bakery manifesto…
